Palin-Proof Mousse
Alaska’s most famous politician/moose hunter doesn’t need a hunting license for this mousse, and the most effective weapon is a spoon!
Chocolate Mousse
From “Valrhona Ecole du Grand Chocolat”
Yield: 6 servings
Ingredients
250g bittersweet chocolate
100g heavy cream
40g sugar
6 egg whites
2 egg yolks
Melt chocolate. Set aside.
Bring heavy cream to a boil. Pour into melted chocolate.
Beat egg whites to stiff peaks. Add sugar and continue beating for one minute.
Whisk egg yolks into chocolate.
Fold egg whites into chocolate.
Pour into serving dishes and chill for at least two hours.
