Spiced Hot Chocolate

From: Anthony (Admin)

Yield: 2 servings

Ingredients:

600ml milk

1/4 tsp ground cinnamon

1/8 tsp ground ginger

1/8 tsp ground cloves

1/8 tsp ground nutmeg

100g bittersweet chocolate

100ml heavy cream

2 cinnamon sticks

Directions:

Pour milk, spices and chocolate in a heavy saucepan. Heat slowly until chocolate has melted.

Mix thoroughly.  Add the heavy cream and mix just until incorporated.

Pour into serving mugs.  Garnish with cinnamon sticks.

Chocolate Chip Pie

From: Anthony (Admin)

Ingredients:

1 pie crust, pre-baked
2 eggs
1/2 cup all-purpose flour
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 cup melted butter, room temperature
6 oz semi-sweet chocolate chips
1 cup chopped nuts
Whipped cream

Directions:
Preheat oven to 375F.
Beat eggs until frothy. Add flour, sugar and brown sugar; beat until well blended. Blend in the butter. Stir in the chocolate and nuts. Pour batter into pie shell and bake for 1 hour.
Serve warm with whipped cream.

Chocolate Pecan Biscotti

From: Nita

Yield: About 2-1/2 dozen cookies.

1/2 c butter, room temperature
1 1/4 c sugar
2 eggs
2 1/4 c All-purpose flour
1/4 c powdered cocoa
1 tsp baking powder
1/4 tsp salt
1 c chopped pecans

Heat oven to 350 degrees F. In large bowl, beat butter and sugar
until well blended. Add eggs; beat until smooth.
Stir together flour, cocoa, baking powder and salt; blend into butter
mixture, beating until smooth. (Dough will be thick.) Using wooden
spoon, work pecans into dough. Divide dough in half. With lightly
floured hands, shape each half into rectangular log about 2 inches
in diameter and 11 inches long; place on large ungreased cookie
sheet, at least 2 inches apart. Bake 30 minutes or until logs are set.
Remove from oven; cool on cookie sheet 15 minutes. Using serrated
knife and sawing motion, cut logs into 1/2-inch diagonal slices.
Arrange slices, cut sides down, close together
on cookie sheet. Bake 8 to 9 minutes. Turn each slice over; bake an
additional 8 to 9 minutes. Remove from oven; cool on cookie sheet
on wire rack. Drizzle glaze over entire cookie. Drizzle white glaze
over chocolate glaze.

Chocolate Glaze:

Yield: About 1 cup.

1 c semi-sweet chocolate chips
1 tbsp shortening

In small microwave-safe bowl, add chocolate and shortening. Melt mixture until smooth when stirred.

White Chocolate Glaze:

Yield: About 1/4 cup.

1/4 c White chocolate chips
1 tsp Shortening

In small microwave-safe bowl, add white chocolate and shortening. Melt mixture until smooth when stirred.

Cocoa Sugar Cookies

From: Anthony (Admin)

Yield: 4 dozen

Ingredients:

2 1/4 cups flour
1/2 cup cocoa powder
1 tsp baking soda
1 tsp cream of tartar
1 cup butter, room temperature
1 1/2 cup superfine sugar
1 egg
1 vanilla bean

Directions:

Sift together the dry ingredients (except sugar).

Cream the butter and sugar. Add the egg. Split vanilla bean, scrape out the seeds and add to mixture.

Slowly add flour mixture; beat until flour is lightly blended in.

Divide dough into 2 parts, cover and refrigerate for at least 6 hours.

Heat oven to 375F.

Roll dough into small balls and flatten (Use the bottom of a drinking glass). Bake for 5-8 minutes. Cool cookies on a wire rack.

Double-Decker Fudge

Ingredients:

Deck 1

2 cups sugar
2 ounces bittersweet chocolate
1/2 cup heavy cream
1 tbsp butter

Deck 2

2 cups brown sugar
1/2 cup heavy cream
1 vanilla bean
1 cup finely chopped nuts (I like pistachios)
3 tbsp butter

Directions:
Prepare Deck 1 - place ingredients in saucepan and bring to a boil; let boil for 7 minutes. Beat until firm, then spread into a buttered dish.

Prepare Deck 2 - place ingredients in saucepan and bring to a boil; let boil for 10 minutes. Beat until firm, then spread on top of Deck 1.

Chocolate Chip Cookies

Another Tollhouse alternative.

Yield: 2 dozen

Ingredients:

1 1/8 cup all purpose flour

½ tsp baking soda’

Pinch of salt

½ cup butter, room temperature

½ cup sugar

½ cup light brown sugar

1 egg

1 vanilla bean

1 cup semisweet chocolate chips

 

Preheat oven to 375 F.

Mix flour, baking soda and salt in bowl.

In another bowl, cream the butter and sugars with an electric mixer at medium speed.  Reduce the speed to low, and add the egg.

Slowly mix in the dry ingredients.  Stir in the chocolate chips.

Spoon onto ungreased cookie sheet.  Bake until golden brown (approximately 10 minutes).

Chocolate Banana Smoothie

From Anthony (Admin)

Ingredients:
3 cups milk
2 bananas, large
1/2 vanilla bean, split and seeds removed
1/2 cup chocolate syrup

Directions:
Add 1 1/2 cup of milk, bananas, vanilla seeds and syrup to blender. Blend until smooth.
Add remaining milk and blend again. Serve immediately.
